Chocolate Mousse Pinwheel

chocolateYIELD: 24 ounces    Portions: 6 each

1 1/2 cups Whole Milk
1 package Southern Gourmet Milk Chocolate Mousse Mix
6 each Puff Pastry squares (5"x5")
3 ounces Chocolate Sauce
30 Raspberries (fresh)
Simple Syrup

DIRECTIONS:
Pinwheels:

  • Place the puff pastry squares onto a oven safe sheet tray, cut a 2” slit from center end inward in the middle of each side of each piece off puff pastry square.
  • Fold the cut piece back over the top and pinch to the center to make the pinwheel, glace with the simple syrup and place into a preheated 350º oven (convection preferred) until raised by 4x original height and golden brown in color.
  • Set prepared pinwheels aside to cool.

Preparation:

  • In a chilled bowl combine the milk and contents of 1 Southern Gourmet Mousse Mix Packet (7oz).
  • Using a wire whip attachment, mix on low speed for 1 minute.
  • Scrape down sides of the bowl, and mix on highest speed for 3-4 minutes until stiff peaks form.
  • Chill for 30-60 minutes.

Spoon 4 ounces onto the center of each pinwheel and place pinwheel onto plate, garnish with drizzle of chocolate sauce and top with 5 fresh raspberries.
