Lime Mousse with Lime-Vanilla Syrup

lime mousse1 1/2 cups Sugar
3/4 cup Water
1-4 in piece Vanilla Bean
6 Tbsp, divided Lime Juice
1 1/2 cups Whole Milk
1 package Southern Gourmet Vanilla Mousse Mix
6 Lime Twists

Syrup:

  • Combine sugar and water in heavy small saucepan.  Scrape in seeds from vanilla bean and add the whole bean.  Bring mixture to a simmer over medium heat, stirring until sugar dissolves.  Simmer until syrup thickens and is reduced to 1-1/4 cups, about 8 minutes. Cool to room temperature. 
  • Discard vanilla bean.  Transfer ½ cup syrup to a small bowl and whisk in 2 Tbsp lime juice.  Cover lime-vanilla syrup and chill.

Preparation:

  • In a chilled bowl combine the milk and contents of 1 Southern Gourmet Mousse Mix Packet (7oz).
  • Using a wire whip attachment, mix on low speed for 1 minute.
  • Scrape down sides of the bowl, and add 4 Tbsp. lime juice.  Mix on highest speed for 5 minutes until stiff peaks form.
  • Chill for 30-60 minutes.

Using 2 large soup spoons, form mousse into 12 egg-shaped dumplins, placing 2 on each of 6 plates.  Spoons lime-vanilla syrup over mousse and serve.  Garnish with a lime twist.
