Yes, there are still places in America where the corn dog is king, 4-H er’s show their prize animals, and canning is a contact sport. This year Mrs. Wages had the privilege of sponsoring canning competitions at both the Iowa and Illinois state fairs, and boy, were we impressed! The entries were simply divine, the judge’s exacting requirements kept us on the edge of our seats, and the sheer number of canners celebrating their art was truly inspiring.
To spread the state fair spirit, we asked Iowa and Illinois State Fair blue ribbon winners to share their winning canning recipes and their secret tips that won the judges’ hearts.
Along with those recipes, we know it’s harvest time and the gardener’s hard work and patience is paying off. Master Canner and extension veteran Shirley Camp provides some must-read safety tips on pressure canning, along with some advice on canning blue-ribbon quality products.
Food in Jars’ blogger Marisa McClellan shares recipes for Roasted Corn Salsa, Tomatillo Salsa, and Zucchini and Pepper Relish.
