Raspberry Chocolate Mousse Parfait
YIELD: 24 ounces Portions: 6 each
6 each Brownie
30 each Raspberries
1 package Southern Gourmet Raspberry Chocolate Mousse Mix
1 1/2 Whole Milk
1 1/2 Whipped Topping
1 each Mint Leaf
Mousse Preparation:
- In a chilled bowl, combine the milk and the Southern Gourmet Chocolate Raspberry Mousse Mix.
- Using wire whip attachment, mix on low speed for 1 minute.
- Scrape down sides of bowl, and mix 3-4 minutes on high speed until stiff peaks form.
Parfait Preparation:
- Spoon 1 ounce of prepared Southern Gourmet Chocolate Raspberry Mousse into the bottom of a parfait or Champagne glass.
- Top with 1 ounce of brownie cut into small pieces, and 2 raspberries.
- Repeat the above procedure two times.
- Chill parfaits 30 minutes.
- Just before service, top with a dollop of whipped topping and garnish with raspberry and mint leaf.
