Roasted Garlic Raspberry Sauce

Yield: 3/4 cup
Prep: 25 minutes
Cook: 20 minutes

Ingredients
3 garlic cloves, peeled
1/4 tsp olive oil
1 cup raspberry jam
2 Tbsp balsamic vinegar
1 tsp lemon juice
1/4 tsp onion powder
1/8 tsp salt
1/8-1/4 tsp chili powder
1/8 tsp pepper

Directions

  1. Preheat oven to 425°F.
  2. Place garlic on heavy-duty foil; drizzle with oil.  Fold foil around garlic.  Bake for 15-20 minutes. Set aside to cool.
  3. In a small saucepan, combine the remaining ingredients.  Cut ends from garlic; mash with a fork.  Add to pan.
  4. Bring raspberry mixture to a boil.  Reduce heat; simmer, uncovered for 15-20 minutes or until slightly thickened.  Serve with your choice of meat.
