Quick Pickled Radishes

This snappy refrigerator pickle comes together in just a few minutes and needs only a rest of half an hour before it’s ready for crunching. It works equally well with any variety of radish (including Daikon). It’s also good made with thinly sliced carrot or young turnips.

Quick Sour Pickles

8 Pints 25 cucumbers (medium size) 1/2 gallon cider vinegar 2 cups water 1/2 cup Mrs. Wages® Canning & Pickling Salt 1/2 cup sugar 1/2 cup mustard seed Wash cucumbers and slice lengthwise. Mix vinegar, water, salt, sugar, and mustard seed in large pot. Bring to a boil. Pack cucumber slices into hot canning jars. Fill jar with brine leaving 1/2-inch headspace. Remove air bubbles and adjust lids. Process 10 minutes in a boiling water bath.

Indiana State Fair – Mrs. Wages® Sweet Radish Dill Pickles

I came up with the idea to do radish pickles because we had a bumper crop of radishes this year in our garden, and you can only eat so many raw radishes you know? I like dill with radishes, and I've used the Mrs. Wages® Quick Process Dill Pickle Mix for a number of years to make dilled carrot pickles, so I thought I'd give radishes a try. I found the recipe needed a little sugar to keep the vinegar-radishy-ness from being too harsh.

Mrs. Wages® Medium Spicy Pickles Refrigerator Pickle Mix
