BBQ Pork Nachos | Mrs. Wages


1 boneless pork loin roast, about 2 – 2½ lbs

1 ¼ cups unsweetened apple juice

1 can (6.0 oz) tomato paste

1 pouch (2.5 oz) Orrington Farms® Slow Cookers BBQ Pork Roast Seasoning Mix

2 Tbsp cider vinegar

1 package (10.0 oz) tortilla chip scoops, divided

1 cup rinsed and drained black beans

3/4 cup frozen corn

1/2 cup chopped red onion

3 Tbsp minced cilantro

1 pouch (1.5 oz) Mrs. Wages® Salsa Con Queso Cheese Dip Mix

1 cup milk


1Place pork in a large slow cooker.  In a small bowl, combine the apple juice, tomato paste, Orrington Farms® Slow Cookers BBQ Pork Roast Seasoning Mix and vinegar.  Cover and cook on low for 7-8 hours or until pork is tender.

2Preheat oven to 375°F.

3Using two forks, shred pork.  Place shredded pork and sauce in a 13-in. x 9-in. baking dish. Top with half of tortilla chips.  Sprinkle with the beans, corn, onion and cilantro.  Bake, uncovered, for 20-25 minutes or until heated through.

4In a small saucepan, combine Mrs. Wages® Salsa Con Queso Cheese Dip Mix and 1 cup milk.  Bring a low bowl, stirring constantly to avoid scorching.  Let stand for 2 minute.  Drizzle with cheese.  Serve with remaining tortilla chips.
