Blueberry Muffins | Mrs. Wages


2 c. unbleached all-purpose flour

1/3 c. sugar

3 T baking powder

1 t salt

3/4 c. skim or 1% milk

1/2 c. canola or corn oil

1 egg

1 c. fresh or 3/4 thawed frozen blueberries


1Preheat oven to 400 degrees. Grease bottoms only of 12-muffin pan. Stir dry ingredients together in a bowl. In a separate bowl, beat wet ingredients together. Add dry ingredients all at once and stir just until flour is moistened and batter is lumpy. Fold in blueberries. Fill muffin cups equally. Bake 18-20 minutes, until golden brown. Remove from pan immediately.
