Nostalgia Farms’ Apple Pancakes
1Blend egg, milk and oil.
2Blend dry ingredients together. Add to liquids.
3Beat a whisk or rotary beater until all flour is moistened. Batter will be slightly lumpy.
4Fold in grated apple.
5Grease heated griddle, using a ladle pour batter in pools slightly apart. Turn pancakes as soon as they are puffed and full of bubbles, but before bubbles break. Turn and brown on other side. Serve immediately with butter and syrup. If you have an abundance of apple, chop up an apple and sauté in 1 Tbsp of butter, until tender. Sweeten if desired with 1 Tbsp sugar or honey add 1/2 tsp cinnamon. Spoon over pancakes with butter and syrup.
*If you don’t have buttermilk, pour 1 Tbsp white vinegar into a cup measure and fill with milk, let stand for 5-10 minutes, use as normal.
**A firm tart apple, or cooking apple works best. Granny Smith or Yellow Delicious are good choices.
