Taco Stuffed Peppers


1Preheat oven to 350°F.

2Cut peppers in half lengthwise; remove stem and seeds. Set aside.

3In a large skillet, cook turkey and onion over medium-high heat until no longer pink; drain fat.

4Stir in the prepared Mrs. Wages® Salsa, beans, water, Mrs. Wages® Salt Free Roasted Bell Pepper & Garlic Taco Seasoning Mix, chilies and salt. Bring to a boil. Reduce heat and simmer, uncovered, for 5 minutes or until most of the water has been absorbed.

5Spoon about ½ cup turkey mixture into each pepper half. Place peppers in an ungreased 13-in. x 9-in. baking dish. Cover and bake for 25-30 minutes. Sprinkle with cheese. Bake, uncovered, for 3-5 minutes or until cheese is melted and peppers are crisp-tender.

6Top with sour cream, tomatoes and cilantro. Serve with additional prepared Mrs. Wages® Salsa if desired.


4 medium green bell peppers

1 lb lean ground turkey

1/2 cup chopped onion

1 cup prepared Mrs. Wages® Salsa*

3/4 cup black beans

3/4 cup water

1 pouch Mrs. Wages® Salt Free Roasted Bell Pepper & Garlic Taco Seasoning Mix

1 Tbsp diced green chilies

1/2 tsp salt

1/2 cup sour cream

1/2 cup chopped tomato

2 Tbsp minced cilantro

Additional prepared Mrs. Wages® Salsa, optional
