Cuban Quesadillas

Cuban Quesadillas


1Season pork with salt and pepper. Place pork in a small slow cooker. Cover and cook on high for 3-4 hours or until pork is tender. Remove pork from slow cooker. Using two forks; shred pork. This should yield about 1 cup meat.

2Coat a large skillet with cooking spray, and heat on medium high heat.

3Place one tortilla on skillet. On one half of tortilla, layer 1 slice Swiss cheese, ham and roast beef. Top with about ¼ cup shredded pork, 4 pickles and 1 Tbsp mustard; fold over.

4Cook for 1-2 minutes on each side or until tortilla is lightly browned and cheese is melted.

5Repeat with remaining ingredients.


1 lb pork shoulder blade steaks

1/4 tsp salt

1/4 tsp pepper

4 whole wheat tortillas (8 inches)

4 slices Swiss cheese

4 slices deli ham, thinly sliced

4 slices deli roast beef, thinly sliced

16 slices prepared Mrs. Wages® Bread and Butter Pickles

4 Tbsp stone ground mustard
