Ingredients

2 cups uncooked wide egg noodles

1 pint (2 cups) prepared Mrs. Wages® Classic Salsa

3/4 cup sour cream

1/4 cup red bell pepper, diced

1 tbsp fresh cilantro, chopped

2 tsp garlic powder

2 tsp onion powder

1 tsp salt

1 tsp cumin

1 lb cooked chicken breast, shredded (about 3 cups)

1 15-ounce can corn, drained

1 15-ounce can black or pinto beans, drained & rinsed

1 1/2 cups shredded cheddar cheese, divided

Directions

1Preheat oven to 350°F. Spray a 9x13 baking dish with cooking spray. Set aside.

2Cook noodles according to package directions.

3While noodles are cooking, combine the salsa, sour cream, red bell pepper, cilantro, garlic powder, onion powder, salt and cumin in a large mixing bowl.

4Add cooked noodles into the salsa mixture. Stir to combine.

5Add in the chicken, corn, black beans, and 1 cup of the shredded cheese. Stir together to combine.

6Pour into the baking dish and sprinkle the remaining cheese on top. Cover and bake for 20 – 25 minutes or until heated through.

7Remove cover and let cook an additional 5 minutes.

8Garnish with jalapeño slices and diced tomatoes, if desired.

Tips & Tricks: Don’t like sour cream? Replace the can of corn kernels with a can of creamed corn instead and no sour cream is needed!
