Gumbo with Pickled Okra

Ingredients

6 cups water

1 package (8 oz) Gumbo & Rice Entrée Mix

2 lbs smoked or Andouille sausage, sliced

1 quart prepared Mrs. Wages® Pickled Okra, sliced into ½ inch pieces (about 2 cups)

1-2 tsp hot pepper sauce, optional

Directions

1In a large saucepan, combine water and Gumbo & Rice Entrée Mix. Bring to a boil; stirring often. Add sausage. Bring to a boil. Reduce heat; simmer, covered for 24-26 minutes or until rice is tender. Stir occasionally.

2Just before serving, add okra and hot pepper sauce, if desired. Bring to a boil. Reduce heat and simmer for 1-2 minutes or until heated through.

Cook’s Note: Make the pickled okra from fresh okra and Mrs. Wages® Pickled Okra & Vegetables Quick Process® Vegetable Mix or buy prepared pickled okra at the store to save time.
