Fiesta Chicken Casserole
Perfect casserole for the entire family or an easy dish to bring to a potluck.
Directions
Preheat oven to 350°F. Spray a 9x13 baking dish with cooking spray. Set aside.
Cook noodles according to package directions.
While noodles are cooking, combine the salsa, sour cream, red bell pepper, cilantro, garlic powder, onion powder, salt and cumin in a large mixing bowl.
Add cooked noodles into the salsa mixture. Stir to combine.
Add in the chicken, corn, black beans, and 1 cup of the shredded cheese. Stir together to combine.
Pour into the baking dish and sprinkle the remaining cheese on top. Cover and bake for 20 – 25 minutes or until heated through.
Remove cover and let cook an additional 5 minutes.
Garnish with jalapeño slices and diced tomatoes, if desired.
