Chickpea Salsa

Directions

1In a large bowl, combine the chickpeas, corn, avocado, tomato and red onion.

2In a small bowl, whisk the oil, vinegar, Mrs. Wages® Classic Salsa Seasoning Mix and lime juice.  Pour over chickpea mixture; stir gently to coat.

3Cover and chill for at least 1 hour. 

4Before serving, sprinkle with cilantro.  Serve with tortilla chips.

Ingredients

1 can (15.0 oz) chickpeas, rinsed and drained

1 can (14.0 oz) corn, rinsed and drained

1 medium avocado, peeled, seeded and chopped

1 large tomato, chopped

1 red onion, chopped

½ cup olive oil

¼ cup red wine vinegar

2 pouches (0.8 oz) Mrs. Wages® Classic Salsa Seasoning Mix

1 Tbsp lime juice

1 Tbsp minced cilantro

Tortilla chips
