Directions

1Combine corn and water in a large pot. Bring to boil over high heat. Reduce heat to medium-low and simmer, covered, for 10 minutes.

2Add remaining ingredients; increase heat to medium-high, boiling mixture uncovered for 5 minutes, stirring occasionally.

3Ladle into hot, sterilized jars, leaving 1/2-inch headspace. Apply lids and adjust bands. Process in a hot water bath canner for 15 minutes.

4Allow to cure in jars for at least 1 week before serving for best flavor.

8 cups fresh corn

2 cups water

2 cups chopped celery

2 cups chopped mixed sweet bell pepper

2 cups chopped sweet onion

2 1/2 cups Mrs. Wages® Pickling & Canning Vinegar

1 3/4 cups sugar

2 tbsp kosher salt

2 tsp celery seeds

3 tbsp prepared yellow mustard

1 tbsp mustard seeds
