Thanksgiving will be here before you know it. The wonderful smells, the sound of mingling, and long overdue reunions will fill your home; but what do you do in the days surrounding it? Family and friends are arriving and the joy of the season is coming into focus, but you need snacks or meals before the big day.

Fall Harvest Charcuterie Board

Looking for something to set and forget? Charcuterie boards are an easy and fun way to build a snack plate from the ground up. All you need are three basic flavors; creamy, salty, and sweet. Any combination between those three flavor profiles and crackers is a home run!

  • Creamy: Cheese is the obvious choice. The ideal option here is a soft brie, but cream cheese can make a nice substitution. Other great options include cheddar for bite and goat cheese for tang. 
  • Salty: Your best bet here is various meats and nuts. Smoked sausage provides an excellent savory element while prosciutto is delicate, sweet, and perfectly salty. Almonds and walnuts add some crunch, salt, and earthiness as well. Do you need some spice with your salt? Mrs. Wages® 1 Step Cherry Habanero Pickles will make an excellent contribution. 
  • Sweet: This is where things get adventurous. This is a wonderful opportunity to use your homemade jams, jellies, and garden vegetables. Pepper jelly is a wonderful choice here and pairs great with most cheeses. If you have carrots or yams you can roast them for nibbling, or puree them for a Thanksgiving dip.

Chicken and Corn Stuffed Poblano Rellanos 

This recipe is perfect for when family and friends are popping in and out of the kitchen before mealtime. These are loaded with warm and vibrant Mexican flavors and they’re a great way to mix it up during the holiday season. 

For this recipe you’ll need:

  • 1 lb ground chicken
  • 1 lb corn (fresh/frozen)
  • 1/2 cup red pepper (small dice)
  • 1/2 cup yellow onion (small dice)
  • 1 lb Pepper Jack Cheese (grated)
  • 6 each poblano peppers
  • 1 pack (0.8 oz) Mrs. Wages® Jalapeño Salsa Mix
  • 4 oz vegetable oil
  • Salt and Pepper (to taste)

In separate pans pour the 2 ounces of oil in each and bring up to high heat. Sear the chicken meat in one pan until golden brown and cooked through. At the same time sear the corn, red peppers and onion until starting to brown. Combine the two pans together into a large bowl then add 3/4 the pepper jack cheese and blend together. Set aside to cool. Blister then peel and deseed the poblano peppers with a small slit in the side. Stuff the peppers with the cooled filling and lay onto an oven safe tray. Top each with a pinch of the remaining pepper jack cheese and bake in a preheated 400-degree oven until heated throughout and the cheese starts to brown. Serve with an enchilada sauce.

 

Cocktail Meatballs 

These are those meatballs that you can’t get enough of at every wedding – only better! 

We start with:

  • 3 lbs prepared frozen meatballs
  • 2 ¾ cups grape jelly 
  • 1 ½ cups prepared Mrs. Wages® Chili Base
  • 1/2 cup Mrs. Wages® White Distilled Vinegar (5% Acidity)
  • 2 Tbsp tomato paste

Place meatballs in a slow cooker. In a large bowl, combine the jelly, chili base, vinegar and tomato paste. Cover and cook on low for 4-6 hours or until sauce is smooth and meatballs are heated through. Serve with toothpicks.

Note from Mrs. Wages®: You may either make the chili sauce from fresh tomatoes and Mrs. Wages Chili Base Seasoning Mix or buy prepared chili sauce at the store to save time.
