1In a Dutch oven, cook the sausage, mushrooms, green pepper, onion and garlic over medium heat until sausage is no longer pink; drain.
2Stir in the pasta sauce, water, red pepper and Italian seasoning. Bring to a boil; reduce heat and simmer for 25 minutes, stirring occasionally.
3Stir in Parmesan cheese until melted. Divide soup among serving bowls; sprinkle with mozzarella cheese and croutons if desired.
Cook’s Note: You may either make the pasta sauce from fresh tomatoes and Mrs. Wages Pasta Sauce Seasoning Mix or buy prepared pasta sauce at the store to save time.
